Cookies for Joy and intelligence. Saint Hildergard of Bingen recipe.

“Powder the same quantity of nutmeg and cinnamon and less clove. Prepare tiny cookies with this powder adding spelt flour and water. Eat those cookies often. They will drown all heart and spirit bitterness. It will open up even dull senses; the spirit will rejoice; and all toxic humors will diminish”. Saint Hildergard of Bingen (1098-1179)

  • 1/4 of a cup nutmeg

  • 1/4 of a cup cinnamon powder

  • 1 1/4 teaspoons clove

  • 1 1/ lb spelt flour (6 cups)

  • 1 3/4 cup sugar cane

  • 9 onces (2 1/4 sticks) butter or coconut oil

  • 2 1/2 cups almond

  • 2 egg yolks

  • 1 tsp sea salt

    Mix dry ingredients (nutmeg, cinnamon, clove and spelt flour). Reserve. Melt butter. Mix with sugar and yolks. Mix dry and wet ingredients. Knead. Add the needed water thus the mix won’t stick to the hands. You might let the mix rest or go straight and roll the dough and use cookie cutters. Place in a baking sheet with parchment paper. Bake for 12 minutes 350 F. Hildergard suggested for adults to eat 5 Joy Cookies a day and children 3. The most tasty remedy for joy!
